Seafood is great and so are sandwiches, so why not combine the 2 and have a yummy Shrimp Po Boy Sandwich. They are pretty easy to make and are delicious, even my 2 1/2 year old loves to eat these. This is one of those meals that is still very satisfying but doesn't take all night to make. It's a sandwich, but a mature sandwich that even the man of the house will like. This time I made it with Prawns, but if you prefer you can do the exact same recipe I'm going to give you but substitute your favorite seafood instead such as: oysters, scallops, catfish nuggets, snapper, calamari etc......if you don't like seafood you can always get a boneless skinless chicken breast and cut into strips and use in place of fish and make a fried chicken sandwich with the remoulade sauce. This recipe is interchangeable and the sauce is great on a variety of things from a seafood dip, to a chip dip to a sauce for a chilled red potato salad..it's very very versatile. I have tweaked the recipe to my liking and I'm sure you will do the same. OK, well here we go....my very 1st blogged recipe! Hope you enjoy, and please please leave your comments at the bottom!

Ingredients:
2 pounds Prawns or Med Shrimp shelled, deveined & with tails off
Corn Meal
Garlic Powder
Ground Pepper
Cajun Seasoning
2 Eggs Beaten w/ splash of milk
Oil (any kind of vegetable or canola frying oil)
2 Cups Shredded Iceberg Lettuce
2 Med tomatoes Sliced
4 Sandwich Rolls (use whichever you prefer....sourdough, sweet rolls, baguettes)
Spicy Remoulade Sauce:
1 1/2 Cups Mayo
1/4 C. Mustard (Brown or Spicy Mustard works great, but yellow is fine too)
Hot Sauce (A few dashes depending on how spicy your taste is)
1 Tbl Sp Horseradish
Garlic Powder (a few dashes)
Black Pepper (a few dashes)
Paprika (dash)
Cajun Seasoning (few dashes)
1/3 C Vinegar (Balsamic preferably or wine vinegar)
1/4 C Grated Parmesan Cheese (Kraft is great for this)
1. Mix all remoulade ingredients together in a bowl, adjust seasonings to taste or to make or reduce spiciness. Set to the side
2. Rinse shrimp pat dry and place on large cookie sheet or flat surface. Season well with all listed seasoning ingredients, season heavily because when you dip them you lose some of your seasoning.
3. Take medium size pot and fill with 1 inch of oil and heat on high. When oil starts to pop it's ready to fry.
4. Pour some cornmeal onto a plate or in a pie tin. Dip shrimp in egg/milk wash then roll in cornmeal until completely coated. Place into hot oil. Repeat with shrimp until pot is full (shrimp should be floating and not touching). Fry for about 5 minutes or until golden brown.
5. Remove from oil and place onto paper towel to absorb oil.
6. When all the shrimp are done frying and the oil has been absorbed, get a separate bowl and place enough shrimp in it for one sandwich and add about 3-4 tablespoons of remoulade sauce and mix until shrimp are coated. Open your sandwich roll and place a layer of shredded lettuce on the bottom, add the shrimp/remoulade mix then top with sliced tomatoes and serve. Repeat step 6 for each sandwich. Should make about 4 sandwiches.
Tip: These sandwiches are great to serve with homemade french fries. For my fries I peel the potatoes ahead of time and slice them and place into ice water for about 30 minutes before frying. The ice water shocks the potato and makes it get an even golden brown color and non mushy texture when frying.
